Paul Latzke (1960-1961) spent three semesters at Menlo before transferring to University of the Pacific, but left an indelible mark on the school's athletics history in a relatively short period of time. Latzke's playing career extended to both the NFL and AFL, where he played for the San Francisco 49ers (1965), San Diego Chargers (1966-68) and Denver Broncos (1969-70).

Latzke was a three-sport star for the Oaks, playing two seasons of football and one season each of baseball and basketball. Latzke was the 1960 Athlete of the Year at Menlo amd an All-Coast Conference selection for the Oaks before moving on to captain the UOP football team, twice winning the Iron Man Award. He also played on the Tigers basketball team as a senior. Latzke graduated from UOP as a double major in History and Physical Education. He would later earn a Master's degree in Physical Education from San Jose State University.

Following his professional football career, Latzke joined the coaching ranks where he coached at Gavilan College from 1972-2004 and also served as the school's athletic director. In 2000 he was elected into the California Junior College Hall of Fame for his coaching accomplishments.
